Harvest Moon is Coming Back to Miami Springs!

Miami Springs, get ready, one of our most beloved hometown gems is making a comeback.
If you lived here any time between 1999 and 2023, chances are you spent many happy afternoons at Harvest Moon Bistro. Known for its famous Hot Cheese Melts, fresh salads, wraps, soups, and of course that unforgettable Orange Creamsicle Smoothie, Harvest Moon wasn’t just a restaurant…it was a vibe. From its lush garden seating to its veggie-centric menu, the bistro carried an undeniable “hippie charm” that we adored.
When it closed its doors, the community felt the loss deeply. But now, we’re thrilled to share some exciting news: Harvest Moon is officially coming back!
A Legacy Reborn
We got the inside scoop directly from Alexander Margolis, son of original owner Terri Margolis, and his longtime friend (and fellow Golden Hawk!) Julio Gonzalez, who is helping bring the dream back to life. They met up with us right outside the new location on 1 Curtiss Parkway, and we got a sneak peek. Even though it is still rough with exposed plumbing and dirt floors, we got to hear their vision of what will be a more state-of-the-art now called Harvest Moon Café.
The idea started simply, a chance reunion between two old friends.
“We were always close friends, always had a great relationship,” Julio told us. “When we bumped into each other, we thought… why not bring Harvest Moon back?”
From there, things moved quickly. They floated the idea on Instagram, and the community buzz was instant.
“We want to bring back something everyone loves, and Alex will be the magic man in the kitchen.” Julio shared.
For Alex who cooked alongside his mom Terri at the OG Harvest Moon, it’s all about honoring his mom’s legacy:
“We’re bringing back the authentic recipes since 1999,” he said. “Italian meatball subs, black bean chicken melts, the chicken Caesar melt, mushroom soup, veggie garbanzo soup, chicken and rice, all the favorites — and yes, the smoothies. Same recipes, old school originals.”
And the best part? They hope Terri herself will be part of the grand opening greeting old customers herself.
“She’s excited the name wasn’t going to go down in vain,” Alex said. “When I told her, she almost broke into tears.”
What to Expect
The new Harvest Moon Café will be bigger than before, but will keep the same warm, garden-style atmosphere. Julio, the project’s investor, describes it as “an interior with an exterior feel.”
Expect some fresh twists too:

Breakfast! For the first time, Harvest Moon will serve a morning menu (9am–11am), including scrambled eggs and bacon on a baguette with tater tots.

Faster service. Alex promises a “formidable kitchen” designed to get food out in 10 minutes, perfect for those with a 30-minute lunch break.

Smart flow. Uber Eats orders will be handled separately (a back door operation), so in-house guests can relax and enjoy.

All electric. No gas, no fryers — everything oven-baked, fresh, and clean. (And yes, the pitas will be vegetarian, made with olive oil from Israel.)

“Everything is fresh… you will not see a freezer in this place,” Alex emphasized.
A Place to Reunite
For Julio and Alex, this is about more than food.
“We’re not doing this just to resurrect an old legacy,” Alex said. “We’re doing it to reunite a community. You don’t know how many people made friends just by eating at our old restaurant.”
If all goes well, the team is aiming for a December soft opening, with a grand opening to follow soon after.
So, Miami Springs… get ready. The comeback we’ve all been waiting for is almost here.
